Smokey Black Beans and eggs

Smokey black beans, baked eggs and jalapeño corn bread 🍞.


*1 tin of drained and rinsed black beans

*1 tin diced tomatoes

1/2 tin water

* 1 heaped T @pepperandme_ mexellent paste

* 1 t liquid smoke

*Chipotle and lime salt

*Ground pepper

1/2 diced onion

3 crushed garlic cloves

6 button mushrooms halved

4 eggs

Fresh coriander


Fry onion, garlic and mushrooms in a splash of oil for 5mins.

Add mexellent paste and cook off for another minute.

Add beans, tomatoes, water, liquid smoke ( add 1/2 t at a time tasting along the way use more if you like it smokey) and season with Chipotle salt and pepper.

Cook the sauce until the sauce has reduced and thick.

Make a well at the edge of the pan and crack in eggs one at a time.

Cook in the oven 180deg for approximately 7mins of until eggs are cooked to your liking

Tip use a cast-iron pan if you have one.

Garnish with salt, pepper, coriander- vegan bacon, bacon , avocado would also make a nice garnish.

Serve with cornbread, I used the @chelseasugarnz recipe with addition of jalapeño and nutritional yeast.
